The Naughty Chef
Delicious Calzone Pizza in A Hawker Centre.
Having Italian food in Singapore can usually be quite costly, but what if I told you that you can get quality Italian dishes in a hawker centre? Would you believe me? Located at The Bedok Marketplace, The Naughty Chef is a stall run by Augustine Koh and his wife, Charlene Koh.
The Naughty Chef isn?t new to the food and beverage scene in Singapore.
They first started out in Tanjong Pagar in January 2017, before moving to their current location.
This no-frills hawker stall serves up affordable Italian dishes, such as pizzas and pastas. Despite having a small kitchen space, The Naughty Chef has an extensive menu with 15 different types of pizzas. In addition, diners get to choose their favourite type of pizza crust, such as double-baked, freshly hand-stretched, or calzone.
The pizza features homemade Italian roasted pork belly, fresh cherry tomatoes and mozzarella cheese, all encased within the oversized puff.
We enjoyed the chewy and flavourful calzone. The richness of the cheese complemented the sweet and tart cherry tomatoes, but what stole the show was the smoky pork belly which had a crispy crackling.
Augustine shared that he is a firm believer that tasty food does not require msg, and that belief is upheld at The Naughty Chef. In fact, most of the sauces, such as the pomodoro sauce, are made in-house.
We definitely could taste the passion and dedication that goes into the food!

Tha Chang Noodle Bar
Traditional Boat Noodle that enchant your heart. A unique spot that is a monocular experience where we merge a good mix of Traditional Thai Boat Noodle with Contemporary Creation.
Opened in April by three sassy Thai ladies, Tha Chang Noodle Bar does not pledge allegiance to a specific region of Thai cooking, and instead focuses on broadly popular dishes like Thai salads, grilled pork skewers and crab omelette fried rice in addition to their signature boat noodles.
Maysa D, 36 (right in pic), is the mastermind behind the noodles. Her aunt owns a popular 35-year-old stall ? Po Pratip Boat Noodles ? in Bangkok?s Bueng Kum district. ?I learned the recipe from her with the intention of starting my own business in Singapore,? explains Maysa, who was acquainted with co-owner, Anna S, 32 (middle), when they worked as entertainers at a Thai club in Golden Mile Complex about a decade ago.
Six years ago, she opened a boat noodle shop with a partner in the same mall. ?Anna loved my noodles and she visited my shop almost every day. I sold the business after my partner pulled out a year later as I could not cope on my own. [After the closure] Anna kept messaging me to start a business with her,? she says with a laugh.
We definitely could taste the passion and dedication that goes into the food!'

97 Nasi Lemak
Recently, a netizen’s post on Facebook caught our eye when he declared that the hawker running 97 Nasi Lemak — which opened six months ago at Old Airport Road Food Centre — looks like Taiwanese-born actress Vivian Lai. The very next day, another netizen headed down to the stall to check it out for himself. His verdict? “Nasi is lemak, and babe is pretty!”
“I first heard about those posts from my friends. I had a good laugh,” hawker Ellis Phua, a mother of three, says. “But the next few days after the posts went up, we got a [better] crowd. You could see some guys in the queue taking extra glances [at me],” the 41-year-old adds.
97 Nasi Lemak offers great palatable delights from all its various condiments and sides. The rich fluffy aromatic coconut rice is served with special made Fried chicken wing, fried egg, fresh Japanese cucumber, piquant sambal, ikan bilis and peanuts.
We definitely could taste the passion and dedication that goes into the food!'

Wen Kang Ji
Wanton Mee With Mouthwatering Char Siew!
Despite being open for only about a week at the newly renovated Golden Mile Food Centre, Wen Kang Ji is already garnering lots of attention online. I?m confident that Wen Kang Ji will be the next wanton mee sensation because of their excellent char siew.
Like a treasure being buried deep within, you have to walk all the way, into the deep end of the hawker centre?s basement to locate them. The stall is opened by Desmond, his wife, and their buddy and business partner, Markus.
Even though the stall is new here, Desmond said that it has a history of about a year. The stall was at Albert Centre for a month in 2020, just before Circuit Breaker started. Although they tried their best to sustain the business, the grim outlook then forced them to call it quits.
Fast forward to a year later, they decided to step out with courage and restart their business here and we?re so glad they did!
If you?re still wondering who is Wen Kang because there was no mention of him, Wen Kang is actually Desmond?s one-year-old son! He shared with a proud fatherly smile that because the stall is named after Wen Kang, he?s the real boss.
We definitely could taste the passion and dedication that goes into the food!'

CHAI CHUAN TOU MUTTON SOUP
This Michelin Bib Gourmand Awardee Deserves Special Mention!
The Michelin Bib Gourmand list broke on the morning of 18th July. By 1045am, I was already at Bukit Merah View Food Centre, ready to be amongst the first to try the newly crowned Bib Gourmand award recipient — Chai Chuan Tou Mutton Soup.
However, with only fifteen minutes to opening, the shutters of the stall were still down.
This cannot be the case, I thought. Makansutra reported that preparation at Chai Chuan Tou starts as early as 8 am. I later found out that the stall will be closed that day as the owners had some urgent matters to attend to.
Two days later, I returned to Chai Chuan Tou, wholly determined to have that Bib Gourmand worthy bowl of mutton soup. I confidently walked to the stall at 11 am and, lo and behold, a queue of at least ten customers has already formed!
This happened only one minute after opening. I guess their mutton soup must really be something else!
I must say, the gaminess of mutton was not overpowering at all. Instead, the mutton had a light fragrance and its sweetness was well infused into the soup. Of the two, I preferred the bowl of mutton ribs soup.
The meat was really fall-off-the-bone tender. If you want a sense of how skilful the owners of Chai Chuan Tou are in cooking mutton, this bowl of mutton ribs soup will give you a pretty good idea.
From the insane queue, I gather that Chai Chuan Tou’s mutton soup is really popular, especially with the older generation!

Xin Heng Kee Chicken and Duck Rice
Xin Heng Kee Chinese and Duck Rice has been around for quite some time. I will talk about one of my favourite hawker food that I practically cannot live without as my last post for year 2015.
It is none other than Chicken Rice. This time round, Lao Beng was at Pek Kio Market and Food Centre scouring for an early lunch at 11.20am.
I was immediately attracted to a snaking queue for this particular chicken and duck rice stall. Naturally, when you see Singaporeans willingly to join a queue even when the queue is already so long, their food must be fantastic.
Undaunted, I immediately joined the queue for Xin Heng Kee Chicken and Duck Rice stall (新兴记鸡鸭饭).
As I was queuing, I struck up a conversation with a middle aged uncle in front of me. I asked if the white steamed chicken was better or the roasted chicken was better. He told me he personally prefers the white steamed chicken whilst his wife prefers the roasted chicken.
From the picture above, it was quite evident that the white steamed chicken was the most popular choice of the day. The uncle was very kind and helpful and we continued our conversation with him giving me recommendations on the other good hawker food in Pek Kio Market and Food Centre.
It is always a good thing to have a conversation with others whilst queuing up as it really helps in containing one?s impatience.
Good and tasty food is worth queuing for, this is especially so for Xin Heng Kee as their prices are affordable and delicious food cooked with their dedication and hard work.
The snaking long queue is a testament to their simple but delicious comfort food.

Heng Hua Boon Lay Boneless Duck Noodles
Delicious Noodles at Boon Lay Place Food Village With Daily Long Queues.
There is one reason why I really like visiting Heng Hua Boon Lay Boneless Duck Noodles (興發文礼起骨鸭面) at Boon Lay Place Food Village. Other than the super delicious duck noodles, it’s because the stall doesn’t boast the usual “culinary awards”, celebrity photos, and other random accolades.
I’m not saying it’s not good to have accolades, but the fact that the stall owners don’t really care all about these, suggests they would rather focus their energy on just one task: producing good food.
Heng Hua Boon Lay Boneless Duck Noodles (興發文礼起骨鸭面) is a well-known hawker stall at Boon Lay Place Food Village that sells braised duck noodles.
Every time I visit the stall, there will always be a queue of at least 5 or 6 people. During peak hours, there can be almost 20 people in the queue.
The old-school stall opens early at 6am for the breakfast crowd. It will usually close before the stated closing time of 10am, once the duck noodles are sold out. It reopens again at 5pm for dinner, and closes at around 7pm (or earlier if they sell out).
As mentioned, Heng Hua does not really engage in much marketing, and it got popular purely by word of mouth. This is testimony to how delicious their duck noodles are.
And you can be rest assured that unlike some other famous food stalls, you will not be subjected to tirades by the staff if you make a mistake or take too long while ordering. It’s good to see that they respect their customers.
Heng Hua Boon Lay Boneless Duck Noodles is one of my favourite hawker stalls in Singapore. In a food scene dominated by sponsored media tastings and food fads, it’s comforting to know that I can still enjoy a bowl of scrumptious duck noodles at a hawker stall that has stuck to its roots.

545 Whampoa Prawn Noodles
Old School Prawn Mee by Chio Bu Hawker
What makes a good bowl of prawn noodles? For most of us, it?s the broth that matters. To some, it?s the chilli sauce that makes the difference. And now, people look for big prawns ? the bigger the better.
But during our younger days (or my parents days), it?s rare to see big prawns in the noodles. Just give us a delicious bowl of piping hot prawn noodles and it will make us slurp non-stop.
545 Whampoa Prawn Noodles is one of the few hawker stalls that still has that old school charm. But the unique thing is, the noodles are prepared by a pretty hawker Li Ruifang. I first ?got to know? Ruifang via Instagram as she has been actively sharing her meals.
It was till later that I found out she was the hawker behind 545 Whampoa Prawn Noodles. It?s amazing how social media connects people, isn?t it?
The roots of the prawn noodles in Ruifang?s family go far back into the 1950s when her grandfather started selling it along the streets of Whampoa before it was even named so. When Whampoa Market was built in 1973, Ruifang?s Dad and Grandmother took a stall, and has been selling prawn noodles since then. The current stall at Whampoa Market is run by Ruifang?s aunts.
With the guidance of her dad, the 32-year-old finance graduate decided to be a hawker, bringing bowls of tradition and history to Tekka Food Centre.
Everyone I know who has tried 545 Whampoa Prawn Noodles at Tekka Market only has good things to say. Using a recipe that spans across 3 generations, what you get is that old school prawn noodle that has got that familiar taste from grandmother?s time.
I wasn?t old enough to experience police-wear-shorts period but their prawn noodles hit the comfort spot with its flavourful broth.
I have met many aspiring young hawkers and I believe Ruifang is one of the more successful ones who never give up. I am really grateful that she is continuing the hawker heritage.

Tasty Fried Fish Soup At Whampoa Makan Place, With Michelin Bib Gourmand.
Hawker stalls that received awards and media features would typically display those accolades all around, but you find none of that here.
Even though it has been listed in the Singapore Michelin Guide with a ?Michelin Bib Gourmand?.
Could be considered a ?hidden gem? that is worth discovering by picky fish soup lovers, except that it already has a long line.
Though this famous stall is named ?Beach Road Fish Head Bee Hoon?, it is actually located at the morning market of Whampoa Food Centre (Whampoa Makan Place).
Long queue is a typical scene here, where they specialise in fish dishes, different soups, and sliced fish bee hoon.

Sheng Seng Fried Prawn Noodles

Old-School Hokkien Mee At Pek Kio Food Centre, With Michelin Plate.
Pek Kio Food Centre has its own legion of fans for its old school charm, and offers a lot of pocket-friendly stalls with local specialties.
Okay, I have been to Pek Kio Food Centre quite a number of times, but never really took note of this Hokkien Mee stall.
I would reckon that Sheng Seng Fried Prawn Noodles 生成炒虾麵 has a certain nostalgic taste that its regulars like.
The stall is also listed in the Singapore ?Michelin Plate? guide. (The Michelin Plate or L?Assiette Michelin is a new designation worldwide, a symbol that indicates ?restaurants where the inspectors have discovered quality food.?)
The noodles are on soft and on cooked on the soggy side which some people may like.
In terms of flavours, I thought it lacked that strong ?seafoody? and prawn stock base, that customers with 重口味 (who generally prefer something more flavourful) may not fancy.
The sweet chilli sauce was delicious though.
There?s always a queue at this stall but it does clear up fast. Given the price, this dish will fill up your tummy affordably.

Soon Kee Wanton Mee
Stalking Pek Kio Market & Food Centre today, I noticed that there were three wanton mee stalls in this small hawker centre (less than 50 stalls). Only Soon Kee Wanton Mee had a queue and it was 10 deep even at 8am on the Friday morning when I was there. Naturally, it was the first WTM stall I tried out here.
Seven or eight people ahead of me and it took me about 15 minutes to make it to the head of the line - pretty quick.
It's a huge mound of egg noodles set in a pool of reddish-brown sauce and topped with a generous amount of char siew slices.
Some people say that specks and splashes of sauce on the rim of plates are unprofessional but personally I feel that it is part of what makes hawker food charming to me. It's a certain no frills, no pretences, down-to-earth come as you are, authenticity I like.
The long queue at Soon Kee Wanton Mee attest to the popularity of their sambal and spongy egg noodles (remember there are three WTM stalls here).
I enjoyed Soon Kee's wanton mee with their signature spicy savoury sambal sauce but with neither lard nor sesame seed oil, I am a little ambivalent about it.
Any fans of Soon Kee here? I would love to hear your views

Wah Kee Big Prawn Noodle
https://danielfooddiary.com/wp-content/uploads/2019/04/wahkee10.jp g" alt="" border="0" />
“Michelin” Prawn Noodles Served By “Auntie With Attitude”, At Pek Kio Food Centre.
It is slightly unfortunate that Wah Kee Big Prawn Noodle at Pek Kio Market and Food Centre has become more ‘famed’ for a temperament owner, rather than its goods.
Just have a scroll through various review websites, and you would find countless feedback on the auntie’s attitude, especially if you do not queue behind a red line or ordered the cheapest bowl.
One fine day recently, I decided to head over to Pek Kio to have Wah Kee again, only to find ZERO queue (observed for a while, and it was still mostly short.)
Instead, Lai Hiang Pork Rib Prawn Mee in the same hawker centre had a much longer line – which was not quite the same in the past (say 5-10 years ago).
Interesting to note that they do not use pork in cooking the soup, and therefore the broth is lighter with an unique orange colour.
The prawns were large and fresh, soup was tasty and moderately robust in flavours – more intense than the average stall, but didn’t seem to be as rich and gao-gao (ie more diluted) as in the past.
Personal preference, I am a mee kia person, and so Wah Kee is one of the few that offers a decent rendition of dry prawn noodles with mee kia. Many stalls do not even have this option.
As to whether customers can bear auntie’s mood or not, I guess just smile at her, be polite, and see how it goes.

LAI HIANG PORK RIB PRAWN MEE
It was a rainy Monday morning when I arrived early at Pek Kio Market and Food Centre for my lunch, having to run some errands nearby. Unfortunately, as it was Monday, most of the stall were closed.
I look around to see what was available to eat and realised that about half the stalls were actually closed. Nevertheless, I discovered a long queue of people waiting for prawn noodles at Lai Hiang at Lai Hiang Pork Rib Prawn Mee
The chilli sauce used by Lai Hiang for the noodles was so delicious that I actually would probably be able to eat another portion of the $5 noodles that I ordered. It was definitely spicy, but yet tasty as well, and it goes to show that the sauce used for mixing the noodles is a key determinant in how tasty a bowl of (dry) noodles score.
A small bowl of prawn soup or broth was given as a default, and the soup tasted great, with enough umami and prawn taste to the point that it was sweet but yet not too sweet.
Prawns: The prawns were deshelled and were not halved. Each prawn was tender and juicy and complemented the noodles well.
Broth: The prawn broth had a strong flavour of prawns and was also sweet and slightly herbal.
Noodles: The noodles were very tasty and delicious, thanks to the chilli sauce added to the noodles.
All in all, I would highly recommended paying a visit to Lai Hiang Prawn Noodles if you are a fan of good food. Especially on a Monday when most of the other well-rated stall are all closed.

Dover Road Kai Kee Wanton Mee
Affordable S$3 Old-School Wanton Mee From Stall With 30 Years Of Experience At Alexandra.
Contrary to its stall name, Dover Road Kai Kee Wanton Mee is located at Alexandra Village Food Centre, near Queenstown.
It started out at the now-defunct Dover Road Market and ran its business there for 30 years. When the market closed down, the stall moved to Alexandra Village Food Centre instead.
What I love about Alexandra Village Food Centre is its wide variety of food stalls available. From hipster coffee stalls to prawn noodles sold by millennials, to old-school wanton mee stalls and traditional claypot laksa, its offerings are affordable and delicious to boot.

One of the benefits of Fatty Ox HK Kitchen being in such an obscure corner of the hawker centre is that the tables nearby are often empty.
